Chinese Egg Cake | VEGETARIAN🌿
DESCRIPTION
This is a family recipe that got passed on by my grandpa; three generations have been loving it! Egg cake is a traditional Chinese household recipe. It's a great option for any meal during the day. You can customize your egg cake by adding your favorite spices such as green onions and chili flakes; the possibilities are endless. Also, if you like eggs in general, you will definitely love this recipe!
INGREDIENTS
- 3 eggs
- 2 tbsp cold water
- 1/2 cup all-purpose flour
SPICES
- S&P to taste
- 1 clove minced garlic (optional)
- 1-2 chopped green onions (optional but strongly recommended)
- 1 small onion (optional)
- A sprinkle of chili flakes (optional)
INSTRUCTIONS
- Mix all ingredients together vigorously, until the consistency of the mixture is almost batter-like.
- Heat a pan on medium heat, with a light layer of oil.
- Pour about half a centimeter of the batter in a non-stick frying pan and let fry slowly, flipping over after roughly 7 minutes of cook time on each side.
NOTES
- This is a great recipe to be made in batches. Left-over egg cakes can be refrigerated and served within 2-3 days. Reheat them by simply microwaving them or frying both sides for 1 minute.
