Healthy Green Salad Sandwich | Vegetarian🌿


INGREDIENTS
  • 2 cups of lettuce
  • 2 tablespoons of micro-greens
  • 1 ripe avocado
  • 2 boiled eggs (hard boiled or soft boiled)
  • 2 slices of bread 

SPICES

  • Ground pepper to taste
  • Garlic powder to taste
  • A pinch of chili flakes (optional)
  • A pinch of paprika (optional)
  • 2 tbsp of nutritional yeast
  • 1/2 tablespoon homemade mayo (optional but recommended)

INSTRUCTIONS

  1. Cut lettuce into bite-sized pieces. Wash lettuce and micro-greens thoroughly, then put them into a big mixing bowl.
  2. Cut 2 boiled eggs and 1 avocado into bite-sized pieces. Then, add egg and avocado pieces, mayo, black pepper, nutritional yeast, and chili flakes into the mixing bowl.
  3. Mix everything together until avocado and egg yolks become paste-like and coat the veggies evenly.
  4. Toast two slices of bread.
  5. Scoop appropriate amount of veggie mixture onto one of the bread pieces, spread it evenly, then put the other slice of bread on top.
  6. Cut the sandwich diagonally or horizontally in half.
  7. Enjoy!
