Healthy Green Salad Sandwich | Vegetarian🌿
INGREDIENTS
- 2 cups of lettuce
- 2 tablespoons of micro-greens
- 1 ripe avocado
- 2 boiled eggs (hard boiled or soft boiled)
- 2 slices of bread
SPICES
- Ground pepper to taste
- Garlic powder to taste
- A pinch of chili flakes (optional)
- A pinch of paprika (optional)
- 2 tbsp of nutritional yeast
- 1/2 tablespoon homemade mayo (optional but recommended)
INSTRUCTIONS
- Cut lettuce into bite-sized pieces. Wash lettuce and micro-greens thoroughly, then put them into a big mixing bowl.
- Cut 2 boiled eggs and 1 avocado into bite-sized pieces. Then, add egg and avocado pieces, mayo, black pepper, nutritional yeast, and chili flakes into the mixing bowl.
- Mix everything together until avocado and egg yolks become paste-like and coat the veggies evenly.
- Toast two slices of bread.
- Scoop appropriate amount of veggie mixture onto one of the bread pieces, spread it evenly, then put the other slice of bread on top.
- Cut the sandwich diagonally or horizontally in half.
- Enjoy!
