Teriyaki Tofu Bowl | Vegan🌿
Being one of my favorite vegan dishes, this recipe is an extremely fulfilling and hearty lunch/dinner option. The tofu is full of proteins, and the fried lettuces will provide you with enough fiber, making it a balanced meal. The Teriyaki sauce recipe used here can also be used for other veggies or meat, and you only need three ingredients to make it!
INGREDIENTS
- 1 block fried tofu (150g)
- 4 pieces of lettuce leaves
- Brown rice (can be substituted with other types of rice)
SPICES
- 2 tbsp maple syrup
- 1 tbsp Sriracha
- 2 tbsp light soy sauce
- ¼tsp salt
- ¼ tsp black pepper
- Sprinkle of paprika (optional)
- 3 tsp vegetable oil
INSTRUCTIONS
- Cook the rice. Water to rice ratio should be 2:1.
- Cut fried tofu into thick strips, and chop lettuce leaves into smaller pieces.
- Heat up vegetable oil on medium-high heat, fry the fried tofu strips until golden on both sides.
- While the tofu strips are cooking, in a small mixing bowl, add maple syrup, light soy sauce, and Sriracha, mix well.
- Pour the teriyaki sauce mixture onto the tofu strips. Mix around tofu strips and sauce to let tofu absorb the flavor until the sauce starts to caramelize.
- In a serving bowl, place rice as the bottom layer and teriyaki tofu strips on top.
- In the same pan (no need to wash), add in lettuce, salt, pepper and paprika, fry until wilted, then serve with tofu and rice.
- Enjoy!
NOTES
- For the Teriyaki sauce, the ratio between maple syrup, light soy sauce, and sriracha is always 2:2:1.
