Chicken Rice Noodle Soup
DESCRIPTION
All the ingredients used in this recipe are really common and you probably have them in your fridge right now! You can also use any kind of meat to substitute chicken if you would like. This noodle soup is so hearty and is perfect for rainy and cold weather days. Serve it with some fresh tangerines, and enjoy this amazing bowl of goodness!💓
INGREDIENTS
- 2 chicken drumsticks
- 1 cup vegetables of your choice
- 2 cups rice noodles
- 5 cups water
SPICES
- 1 tsp chili flakes
- 1 tsp Sriracha
- 4 tbsp light soy sauce
- 3 tsp garlic powder
- 1 tsp sesame oil
- 1 tsp cooking wine
- Salt
- Pepper
INSTRUCTION
- Cook rice noodles in boiling water (5 cups).
- While rice noodles are cooking, de-bone the drumsticks and cut them into small pieces.
- Add drumsticks, 1 tsp chili flakes, 2 tbsp soy sauce, 2 tsp garlic powder, 1tsp sesame oil, and 1tsp Sriracha into a bowl. Mix well and marinate for 10-15 minutes.
- Add the chicken pieces into boiling rice noodles.
- Add frozen vegetables and cook until chicken completely cooked through.
- Add salt and pepper to taste.

NOTES
- Use thick rice noodles instead of thinner ones, this way the noodles are less likely to overcook while you prepare the drumsticks.
- The soup will start to thicken without the use of extra starch because of how long we cook the noodles. If you like a more watery soup you can cook the noodles for less time, or switch to thin rice noodles.
