Raspberry Scone with Berry Chia Seed Jam
DESCRIPTION
Scones are classic English style afternoon tea desserts. They seem too sophisticated to make at home, but that, in fact, is not the case. Classic English style scones incorporate double cream for a milkier and richer flavor and are usually served with jam and clotted cream.
This recipe puts a healthier spin on classic English scones by adding one egg into the double cream mixture and serving the scone with a vegan low-carb, refined sugar-free berry chia seed jam.
When you finish making these delicious scones, your whole house will be filled with buttery pastry aroma. We absolutely loved it, and you will love it too!
INGREDIENTS
Scone:
- 250g flour
- 65g butter
- 1 egg
- 3 tsp baking powder
- A pinch of salt
- 20g sugar
- 50g dried raspberry
- 100ml whipping cream (aka double cream)
Chia Seed Jam:
- 1 cup mixed frozen berries (i.e. blueberries, strawberries, raspberries, blackberries, etc.)
- 1 1/2 tbsp chia seeds
- 2 tbsp honey or maple syrup
INSTRUCTIONS:
Scone:
- Preheat oven to 425F.
- Sift flour, salt, baking powder, and sugar into a big mixing bowl.
- Add in diced cold butter and rub it into the dry ingredients. (Or, add dry ingredients and butter into a processor and pulse until the butter is well-incorporated into the dry ingredients. )
- Add dried raspberries into the dried ingredients and mix well.
- Add egg into double cream and mix well.
- Add the double cream mixture into the dry ingredients, leaving a little bit liquid for brushing on the surface of sones.
- Roughly mix all the ingredients, then carefully handle everything to form a dough.
- Shape the dough into a circle that is about 2cm thick, then cut it into 8 pieces. (Or, use a circular mold to cut out circular scones.)
- Brush some double cream mixture on top of all scones.
- Bake scones for 13-15min.
- Take out the scones and chill for around 5min.
- Serve it with chia seed jam and enjoy!
Chia Seed Jam (recipe adapted from Pick Up Limes):
- Add mixed frozen berries into a bowl and thaw until completed softened.
- Add in chia seeds and money or maple syrup into the bowl.
- Using a fork or masher, mash the mixture to release moisture held in the berries, and mix everything until well-combined.
- Let the mixture sit for at least 30minutes or overnight in the fridge.
NOTES:
- The dough should only be roughly mixed until no crumbles would fall out. Do not overly knead the dough.
- You can switch out dried raspberries for any dried fruits that you like. Chocolate chips are also a good substitute.
